Vegan Nanaimo Bars

A gluten-free, vegan take on the classic Canadian bar.

These are a Christmas time favourite in my house…and with January 2021 off to a rocky start (schools are closed for another 2 weeks!) we couldn’t just leave them in December.

Classic Vanilla

Bottom Layer:

1/2 cup vegan (or regular) butter

1/4 cup organic sugar

5 tbsp cocoa powder

1 flax egg (1 tbsp ground flax + 3 tbsp hot water, mixed)

1 1/4 cups vegan graham cracker crumbs (or cookies ground into crumbs)

1 cup unsweetened coconut

Middle Layer:

1/2 cup vegan (or regular) butter

2 tbsp coconut milk (full fat canned, or unsweetened from carton)

1 tsp vanilla extract

2 tbsp vanilla custard powder (or sub: 2 tbsp cornstarch + 1 tsp vanilla)

2 cups icing sugar

Top Layer:

4 oz dark chocolate or semi-sweet chocolate (can use non-dairy options)

2 tbsp vegan butter
